Sausage and peppers
Italian sausage browned whole, then finished with sweet peppers, onion, garlic, caramelized tomato paste, wine, basil, and a bright splash of vinegar.

Ingredients

- 2 pounds fresh sweet or hot Italian pork sausage links
- 2 tablespoons extra-virgin olive oil
- 2 large yellow onions, sliced into 1/2-inch wedges
- 2 red bell peppers, cut into 1/2-inch strips
- 1 yellow bell pepper, cut into 1/2-inch strips
- 1 poblano pepper, cut into 1/2-inch strips
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 4 garlic cloves, thinly sliced
- 2 tablespoons tomato paste
- 1/2 cup dry red wine
- 1 teaspoon dried oregano
- 2 tablespoons red wine vinegar
- 1/2 cup torn basil leaves
Instructions
Heat oil in a over medium-high. Brown sausages whole on all sides, 7 to 9 minutes; they will not yet be cooked through. Transfer to a plate.
Add onions, all peppers, salt, and pepper. Cook over medium-high, stirring only occasionally, until softened with browned edges, 10 to 12 minutes. Add garlic and oregano for 30 seconds.
Clear a space, add tomato paste, and cook until dark brick red, 2 minutes. Add wine, scrape up the fond, and reduce by half.
Return sausages and accumulated juices, cover partly, and simmer gently until peppers are silky and sausage centers reach 160°F, 10 to 15 minutes. Rest sausages 5 minutes, then slice on the diagonal if desired.
Stir vinegar and basil into the peppers off heat. Return sliced sausage just long enough to coat and serve as a platter or in crusty Italian rolls.
