Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts, sliced horizontally into 4 cutlets
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 2 tablespoons extra-virgin olive oil
  • 5 tablespoons unsalted butter, divided and chilled
  • 1/3 cup dry white wine
  • 3/4 cup low-sodium chicken stock
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons brined capers, rinsed and drained
  • 1/4 cup chopped flat-leaf parsley

Instructions

  1. Pound cutlets between sheets of parchment to an even 1/4 inch. Season with salt and pepper, then dust lightly with flour and shake off every loose patch.

  2. Heat oil and 1 tablespoon butter in a over medium-high. Sauté cutlets without crowding until golden and the center reaches 165°F, 2 to 3 minutes per side. Transfer to a warm plate for 5 minutes.

  3. Lower heat to medium. Add wine, scrape up the fond, and reduce by two-thirds. Add stock and capers and simmer until reduced to about 2/3 cup, 4 to 6 minutes.

  4. Remove from heat and whisk in lemon juice, then the remaining 4 tablespoons cold butter one piece at a time until glossy. Fold in parsley, taste for salt and acidity, and spoon over—not undercook—the rested chicken.
