Nordic creamy oat porridge with berries
Creamy hot oat porridge with a quick tart berry compote, cool skyr, toasted seeds, and maple.

Equipment
- Any lidded pot of at least two quarts works; a very large pot loses heat faster.
Ingredients

- 2 cups old-fashioned rolled oats
- 2 cups water
- 2 cups whole milk, plus more to loosen
- 1/2 teaspoon kosher salt
- 2 cups frozen mixed berries
- 2 tablespoons maple syrup, divided
- 1 teaspoon lemon juice
- 1 cup plain skyr
- 1/4 cup pumpkin or sunflower seeds
Instructions
Toast seeds in a over medium until fragrant and lightly colored, 3 to 4 minutes; transfer immediately to a plate.
In the same pan, combine berries, 1 tablespoon maple syrup, and lemon juice. Simmer until some berries collapse but the compote remains spoonable, 5 to 7 minutes; transfer to a bowl.
Bring water and milk just to a simmer in the pan. Stir in oats and salt, lower heat, and cook gently, stirring often, until tender and creamy but still visibly oaty, 6 to 8 minutes.
Remove from heat and rest 2 minutes. Loosen with a splash of milk so the porridge flows slowly rather than standing stiff.
Spoon into warm bowls and top with berry compote, cold skyr, toasted seeds, and the remaining maple syrup.
