Deep-pocketed golden Belgian-style waffles with crisp square edges and an airy yeasted interior.

Equipment

  • A standard waffle iron works, but the waffles will be thinner with shallower pockets.
  • Wire rack

Ingredients

  • 1 1/2 cups whole milk, lukewarm
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups (240 g) all-purpose flour
  • 1 1/2 teaspoons instant yeast
  • 1 teaspoon kosher salt
  • Neutral oil spray for the waffle iron

Instructions

  1. Whisk warm milk, butter, maple syrup, vanilla, and eggs. Add flour, yeast, and salt and whisk until smooth.

  2. Cover and let stand 30 to 45 minutes until visibly aerated; meanwhile heat a thoroughly.

  3. Lightly oil the iron and add only the quantity recommended for its capacity, spreading batter close to the edges without overfilling.

  4. Cook without opening until steam has slowed substantially and the waffle is deeply golden, usually 5 to 6 minutes.

  5. Transfer to a wire rack. Serve at once or hold uncovered on the rack in a 200°F oven; never stack hot waffles.
