German quark pancakes with berries

Small fluffy German quark pancakes with warm mixed berries and sour cream.

Ingredients

  • 1 cup low-fat quark, drained if loose
  • 3 large eggs, separated
  • 1/3 cup whole milk
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 tablespoons granulated sugar, divided
  • 1 teaspoon finely grated lemon zest
  • 1/2 teaspoon kosher salt
  • 2 tablespoons unsalted butter, plus more as needed
  • 2 cups mixed berries
  • 1 teaspoon lemon juice
  • 1/2 cup sour cream, for serving

Instructions

  1. Combine berries, 1 tablespoon sugar, and lemon juice in a small saucepan. Cook over medium just until juices appear and about one-third of the fruit bursts, 4 to 5 minutes; set aside.

  2. Whisk quark, egg yolks, milk, remaining sugar, lemon zest, and salt until smooth. Fold in flour and baking powder only until no dry streaks remain; rest 10 minutes.

  3. to soft peaks and fold into the quark batter in two additions, preserving visible air.

  4. Melt a thin film of butter in a nonstick skillet over medium-low. Cook scant 1/4-cup portions until bubbles appear and the undersides are golden, 2 to 3 minutes; turn once and cook through, 1 to 2 minutes.

  5. Serve immediately with warm berries and sour cream.
