Fluffy Northeastern Brazilian steamed corn cuscuz with soft poached eggs, butter, herbs, and black pepper.

Equipment

  • Any lidded pot of at least two quarts works; a very large pot loses heat faster.

Ingredients

  • 2 cups Brazilian flocão cornmeal
  • 1 cup cool water
  • 1 teaspoon kosher salt, divided
  • 4 tablespoons unsalted butter
  • 1/2 cup boiling water
  • 4 pasteurized large eggs
  • 1 tablespoon white vinegar
  • Black pepper
  • 2 tablespoons chopped parsley or cilantro

Instructions

  1. Mix flocão with cool water and half the salt until evenly damp like wet sand. Rest 10 minutes so every flake hydrates.

  2. Fill the lower chamber of a couscous steamer with water. Spoon hydrated cornmeal into the basket without packing, cover, and steam over medium until swollen, tender, and fragrant, 10 to 12 minutes.

  3. Whisk butter into boiling water until mostly melted. Turn couscous into a bowl, break it apart gently with a fork, and drizzle in butter water while fluffing.

  4. Bring a to a bare simmer and add vinegar. Crack pasteurized eggs into cups, slide them in, and poach until whites set and yolks remain soft, 3 to 4 minutes; drain well and season with remaining salt.

  5. Divide hot couscous among bowls, add eggs, and finish with black pepper and herbs.
