Casamiento with eggs
Salvadoran rice and silky red beans married in the skillet, with soft scrambled eggs, crema, cheese, and tortillas.

Equipment
- Preheat a 9-inch metal cake pan; the crust will be lighter but still valid.
Ingredients

- 2 tablespoons neutral oil, divided
- 1 small yellow onion, finely diced
- 1/2 green bell pepper, finely diced
- 2 cups cooked Salvadoran red silk beans with 3/4 cup broth
- 3 cups cold cooked white rice
- 1 teaspoon kosher salt, divided
- 6 large eggs
- 2 tablespoons unsalted butter
- 1/2 cup Salvadoran crema
- 4 ounces queso duro or queso fresco, crumbled
- Warm thick corn tortillas and fried plantain, for serving
Instructions
Heat 1 tablespoon oil in a over medium. Cook onion and pepper until very soft, 5 minutes.
Add beans, their broth, and half the salt; mash only about one-quarter of the beans to create a creamy binder.
Fold in cold rice and cook, scraping and turning, until evenly stained, lightly crisp in spots, and reheated to 165°F, 6 to 8 minutes.
Beat eggs with remaining salt. Melt butter in a separate skillet over medium-low and fold eggs into soft moist curds; remove before they look dry.
Serve casamiento with eggs, crema, cheese, warm tortillas, and optional fried plantain.
