  • If you already have an 8-inch skillet, use it; the omelet will simply have softer edges.

Ingredients

  • 3 cups full-fat plain Greek yogurt
  • 3/4 cup walnut halves
  • 1/4 cup Greek thyme honey or other floral honey
  • 1/4 teaspoon ground cinnamon
  • Pinch of flaky sea salt

Instructions

  1. Toast walnuts in a over medium-low, shaking often, until fragrant and lightly browned, 4 to 6 minutes. Cool 5 minutes and chop coarsely.

  2. Divide cold thick yogurt among four shallow bowls and smooth the surface without whipping out its body.

  3. Drizzle each portion with honey rather than stirring it fully through.

  4. Add toasted walnuts, cinnamon, and a few grains of flaky salt. Serve immediately while the nuts remain crisp.
