Welsh rarebit

Welsh rarebit on thick toast with a deeply browned, bubbling sharp-Cheddar and stout topping.

Equipment

  • Any lidded pot of at least two quarts works; a very large pot loses heat faster.

Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon English mustard powder
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon Worcestershire sauce, plus more to serve
  • 3/4 cup stout or dark mild ale
  • 12 ounces mature sharp Cheddar, finely grated
  • 4 thick slices sturdy white country bread

Instructions

  1. , stir in flour, and cook until biscuit-scented but not brown, 2 minutes. Stir in mustard powder and cayenne.

  2. Whisk in Worcestershire and stout gradually. Simmer until very thick and smooth, then lower the heat and fold in Cheddar a handful at a time without boiling until homogeneous.

  3. Scrape into a shallow dish and chill 30 minutes until spreadable. Toast bread firmly on both sides and cool 2 minutes so steam does not loosen the topping.

  4. Spread rarebit paste about 1/2 inch thick to the edges. Broil close to high heat until deeply golden, bubbling, and just beyond pale comfort, 2 to 4 minutes. Score a shallow crosshatch and splash with extra Worcestershire to serve.
