Turkey and white bean chili

Turkey white bean chili with green chiles, poblano, corn, lime, cilantro, and a creamy broth.

Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 1 poblano pepper, seeded and diced
  • 1 jalapeño, seeded and finely chopped, optional
  • 1 1/4 teaspoons kosher salt, divided
  • 4 garlic cloves, finely chopped
  • 1 1/2 pounds 85% to 93% lean ground turkey
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground coriander
  • 2 cans (4 ounces each) diced mild green chiles
  • 3 cans (15 ounces each) cannellini beans, drained, one can lightly mashed
  • 4 cups low-sodium chicken broth
  • 1 cup frozen corn
  • 1/2 cup sour cream
  • 1/3 cup chopped cilantro
  • 1 lime, zested and cut in wedges

Instructions

  1. Heat oil in a over medium-high. Add onion, poblano, optional jalapeño, and 1/2 teaspoon salt and cook 6 minutes until tender and beginning to color. Stir in garlic for 30 seconds.

  2. Add turkey and another 1/2 teaspoon salt. Cook 7 to 9 minutes, breaking it into bite-size crumbles, until no pink remains and the meat reaches 165°F. Add cumin, oregano, and coriander and stir 30 seconds.

  3. Add green chiles, whole and mashed beans, broth, corn, and remaining salt. Bring to a simmer and cook uncovered 18 to 22 minutes until the broth lightly coats a spoon.

  4. Remove from heat. Whisk 1 cup hot chili into sour cream, then stir the mixture back into the pot with lime zest. Do not boil after adding sour cream.

  5. Fold in half the cilantro, taste for salt and brightness, and serve with remaining cilantro and lime wedges. Keep jalapeño optional and offer hot sauce separately for a family-flexible base.
