Torta ahogada
Guadalajara’s carnitas-filled crusty roll, partially drowned in a brothy roasted-tomato sauce with fiery chile de árbol salsa and oregano-pickled onion.

Ingredients

- 2 pounds boneless pork shoulder, cut into 2-inch pieces
- 1 cup fresh orange juice
- 2 cups water, divided
- 4 garlic cloves, divided
- 1 bay leaf
- 2 teaspoons kosher salt, divided
- 1 medium white onion, thinly sliced, divided
- 2/3 cup apple-cider vinegar, divided
- 1/2 teaspoon dried Mexican oregano
- 1 tablespoon neutral oil
- 1 14-ounce can fire-roasted tomatoes, divided
- 3 cups unsalted chicken broth
- 8 dried chiles de árbol, stemmed
- 1 1/2 cups cooked pinto beans with 1/3 cup cooking liquid
- 1 tablespoon pork lard or neutral oil
- 4 birote rolls or crusty sourdough demi-baguettes
Instructions
Combine pork, orange juice, 1 cup water, two garlic cloves, bay leaf, and 1 teaspoon salt in a . Cover and braise at 325°F until fork-tender, about 2 hours. Uncover and cook on the stovetop until liquid evaporates and pork browns in its rendered fat; break into large juicy pieces.
Pour 1/2 cup vinegar and 1/2 cup water, oregano, and 1/2 teaspoon salt over half the sliced onion; stand at least 30 minutes, then drain.
Cook remaining onion and two garlic cloves in neutral oil until golden. Blend with two-thirds of the tomatoes and chicken broth; simmer uncovered 25 minutes until flavorful but distinctly brothy. Season with remaining salt.
Toast chiles de árbol in a dry skillet for about 20 seconds per side without blackening. Blend with remaining tomatoes, remaining vinegar, and remaining 1/2 cup water until smooth; season to taste. Blend beans and their measured liquid with lard until spreadable.
Refresh split rolls in a 350°F oven until the crust is crisp. Remove a little crumb, spread bottoms with beans, and fill with warm carnitas and pickled onion.
Set each torta in a wide bowl and ladle tomato sauce over and around it until partially submerged. Add chile de árbol salsa to each diner’s tolerance and serve immediately with a spoon.
