Thai basil turkey lettuce cups
Thai basil turkey lettuce cups brings together fragrant turkey, crisp vegetables, tender rice, and cool lettuce in a colorful, weeknight-ready dinner.

- 1 1/4 pounds ground turkey
- 1 1/4 cups jasmine rice
- 1 red bell pepper, thinly sliced
- 2 heads butter lettuce, leaves separated
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon lime juice
- 2 teaspoons brown sugar
- 1 cup fresh basil leaves
- 2 tablespoons olive oil, divided
- 1 teaspoon kosher salt, divided, plus black pepper
Instructions
Cook 1 1/4 cups jasmine rice according to package directions. Keep warm, fluffing or separating it before serving. Combine 2 tablespoons low-sodium soy sauce, 1 tablespoon lime juice, 2 teaspoons brown sugar into a smooth sauce.
Break 1 1/4 pounds ground turkey into rough pieces and season with half of 1 teaspoon kosher salt and black pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high. Cook the turkey, breaking it into small crumbles, until it reaches 165°F; transfer to a plate.
Add the remaining 1 tablespoon olive oil and 1 red bell pepper, thinly sliced. Cook until crisp-tender, 4 to 6 minutes. Return the turkey, remove from the heat, toss with the sauce and 1 cup fresh basil leaves, and season with the remaining salt and pepper.
Set 2 heads butter lettuce, leaves separated on the table with the warm rice. Spoon the basil turkey into the lettuce leaves and serve the rice alongside or tucked into each cup.
