Tamago sando
A pure Japanese egg sandwich: creamy hand-mashed egg salad seasoned with Kewpie, milk, and a trace of sugar on crustless shokupan.

Equipment
- Any lidded pot of at least two quarts works; a very large pot loses heat faster.
Ingredients

- 6 large eggs
- 1/3 cup Japanese Kewpie mayonnaise
- 1 tablespoon whole milk
- 1/2 teaspoon granulated sugar
- 1/2 teaspoon kosher salt
- 1/8 teaspoon white pepper
- 8 slices shokupan or Japanese milk bread
- 2 tablespoons unsalted butter, softened
Instructions
Place eggs in a and cover with cold water by 1 inch. Bring to a boil, cover, remove from heat, and stand 11 minutes. Transfer to ice water and cool completely for 10 minutes.
Peel eggs, halve them, and separate yolks from whites. Mash yolks with Kewpie, milk, sugar, salt, and white pepper until creamy.
Chop whites into small irregular pieces and fold into the yolk mixture without making a paste. Chill 5 minutes.
Spread a very thin butter layer over one inner face of each bread slice. Divide egg salad over four slices in an even layer that is slightly fuller at the center, then close.
Set a light pan on top for 1 minute, trim the crusts with a sharp serrated knife, and cut each sandwich into two neat rectangles. Serve cool, not refrigerator-cold.
