Spinach and ricotta frittata with a just-set center, ricotta pockets, Parmesan, lemon, and herbs.

Ingredients

  • 10 large eggs
  • 1/3 cup whole milk
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons extra-virgin olive oil
  • 1 small shallot, minced
  • 8 ounces baby spinach
  • 1/2 cup whole-milk ricotta, drained
  • 1/3 cup finely grated Parmesan
  • 1 teaspoon finely grated lemon zest
  • 2 tablespoons chopped basil or parsley

Instructions

  1. Heat oven to 375°F. Whisk eggs, milk, salt, and pepper until blended but not foamy.

  2. Heat oil in a . Soften shallot, add spinach in batches, and cook until wilted and its released water fully evaporates.

  3. Spread spinach evenly. Add eggs and stir slowly over medium-low until broad curds begin forming but mixture remains wet.

  4. Dot with well-drained ricotta and sprinkle with Parmesan. Bake until puffed at the edges and just set in the center, 7 to 10 minutes.

  5. Rest 10 minutes, finish with lemon zest and herbs, and cut into wedges.
