Sesame ginger beef bowls

- 1 1/4 pounds lean ground beef
- 1 1/2 cups short-grain brown rice
- 10 ounces green beans, cut into 2-inch pieces
- 3 cups thinly sliced red cabbage
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon grated fresh ginger
- 2 teaspoons toasted sesame oil
- 4 scallions, thinly sliced
- 2 tablespoons olive oil, divided
- 1 teaspoon kosher salt, divided, plus black pepper
Instructions
Cook 1 1/2 cups short-grain brown rice according to package directions. Keep warm, fluffing or separating it before serving. Combine 3 tablespoons low-sodium soy sauce, 1 tablespoon grated fresh ginger, 2 teaspoons toasted sesame oil into a smooth dressing or glaze.
Break 1 1/4 pounds lean ground beef into rough pieces and season with half of 1 teaspoon kosher salt and black pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high and cook the main ingredient until it is deeply browned with no pink remaining; transfer to a plate.
Add the remaining 1 tablespoon olive oil and 10 ounces green beans, cut into 2-inch pieces and 3 cups thinly sliced red cabbage. Cook until browned or crisp-tender, 4 to 6 minutes, then season with the remaining salt and pepper.
Build four bowls with the prepared base, cooked vegetables, and main ingredient. Spoon over the sauce and finish Sesame ginger beef bowls with 4 scallions, thinly sliced.
