Reuben sandwich

Reuben sandwich with deep-golden rye, hot corned beef, squeezed sauerkraut, molten Swiss, and Russian dressing.

  • Use another covered 12-inch oven-safe skillet or transfer before the oven finish.

Ingredients

  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon dill pickle relish
  • 2 teaspoons prepared horseradish
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon sweet paprika
  • Black pepper
  • 1 pound thinly sliced cooked corned beef
  • 2 tablespoons water
  • 1 1/2 cups sauerkraut, squeezed very dry
  • 8 slices seeded rye bread
  • 8 slices Swiss cheese
  • 3 tablespoons unsalted butter, softened

Instructions

  1. Whisk mayonnaise, ketchup, relish, horseradish, Worcestershire, paprika, and black pepper into Russian dressing.

  2. Place corned beef and water in a over medium-low heat until steaming hot, 3 to 4 minutes; uncover and let excess water evaporate. Warm the squeezed sauerkraut in the same pan for 2 minutes, then transfer both to a plate.

  3. Butter one face of every rye slice. Turn buttered sides down; place Swiss on all eight inner faces, then spread Russian dressing over the cheese.

  4. Divide corned beef and sauerkraut over four slices, keeping the stack level and short of the edges. Close with remaining bread, cheese and dressing facing inward.

  5. Griddle in a heavy skillet over medium-low, pressing lightly, until the rye is deep golden and the cheese is molten, 3 to 4 minutes per side. Rest 2 minutes before cutting.
