Persian tahchin inverted into a deep-golden saffron rice cake with a centered chicken filling, barberries, and pistachios.

Ingredients

  • 1/2 teaspoon saffron threads, finely ground
  • 1/3 cup hot water
  • 2 pounds boneless skinless chicken thighs
  • 2 teaspoons kosher salt, divided
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground turmeric
  • 2 large yellow onions, thinly sliced
  • 3 tablespoons extra-virgin olive oil, divided
  • 3 cups basmati rice, rinsed and soaked 30 minutes
  • 10 cups water
  • 2 cups plain whole-milk Greek yogurt
  • 3 large egg yolks
  • 5 tablespoons unsalted butter, melted and divided
  • 1/2 cup dried barberries, picked over and rinsed quickly
  • 1 tablespoon granulated sugar
  • 1/3 cup slivered pistachios

Instructions

  1. Bloom saffron in hot water 15 minutes. Season chicken with 1 teaspoon salt, pepper, and turmeric. Cook onions in 1 tablespoon oil until golden, add chicken and half the saffron water, cover, and cook gently 20 to 25 minutes until 175°F. Cool slightly and shred coarsely.

  2. Heat oven to 375°F. Bring 10 cups water and 1/2 teaspoon salt to a boil. Drain rice, boil 6 minutes until firm-centered, drain very well, and spread on a tray for 5 minutes so steam escapes.

  3. Whisk yogurt, egg yolks, remaining saffron water, 3 tablespoons melted butter, remaining oil, and salt. Fold in rice gently until evenly yellow. Warm barberries with remaining butter and sugar over low heat 60 seconds; remove immediately.

  4. Brush a with a little barberry butter. Press half the rice mixture firmly and evenly into the bottom and 1 inch up the sides. Spread chicken and onions within a 1-inch border, scatter half the barberries, and cover with remaining rice, pressing just enough to seal.

  5. Cover tightly with foil and bake 60 minutes; uncover and bake 25 to 35 minutes until the sides and bottom are deep gold and the center reaches 165°F. Rest 15 minutes, loosen edges, invert decisively onto a rimmed platter, and finish with remaining barberries and pistachios.
