Thin browned Indian masala omelet with onion, tomato, green chile, cilantro, cumin, and buttered toast.

Equipment

  • If you already have an 8-inch skillet, use it; the omelet will simply have softer edges.

Ingredients

  • 6 large eggs
  • 1/3 cup finely diced red onion
  • 1 Roma tomato, seeded and finely diced
  • 1 green chile, minced
  • 1/4 cup chopped cilantro
  • 1/4 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 1 tablespoon neutral oil, divided
  • 4 slices buttered toast, for serving

Instructions

  1. Beat eggs with onion, tomato, chile, cilantro, turmeric, cumin, and salt until evenly distributed.

  2. Heat half the oil in an over medium-high until shimmering. Pour in half the mixture and spread vegetables quickly into an even layer.

  3. Cook until the underside is browned and the top is nearly set, 90 seconds to 2 minutes. Flip with a broad spatula and cook 30 to 45 seconds more.

  4. Transfer immediately and repeat with remaining oil and egg mixture. Serve hot with buttered toast.
