Jianbing breakfast crepes
Chinese street-breakfast crepes with egg, scallion, cilantro, sweet bean sauce, chile, and crisp wonton sheets.

Equipment
- Use another sound 10-inch nonstick skillet with low sides and only a thin film of oil.
Ingredients
1× recipe · Makes 4 crepes
- 3/4 cup all-purpose flour
- 1/4 cup mung bean flour
- 1 1/4 cups water
- 1/2 teaspoon kosher salt
- 4 large eggs
- 4 scallions, thinly sliced
- 1/2 cup cilantro leaves
- 2 tablespoons black sesame seeds
- 1/4 cup sweet bean sauce or tianmianjiang
- 2 tablespoons chile crisp or chile sauce
- 8 square wonton wrappers
- Neutral oil for frying and the skillet
Instructions
Whisk both flours, water, and salt smooth and rest 15 minutes. Fry wonton wrappers at 350°F until blistered and crisp; drain.
Heat a over medium and wipe with oil. Pour in 1/2 cup batter and immediately tilt into a very thin round.
When the surface loses its wet shine, crack an egg over it and spread to the edges. Scatter with scallion, cilantro, and sesame; cook until egg is nearly set, then flip.
Brush the crepe side with sweet bean sauce and chile sauce. Place two crisp wonton sheets across the center.
Fold the sides over the crisp center, fold once more into a portable packet, and serve immediately before the crunch softens.
