Huevos rancheros
Crisp-edged corn tortillas, fried eggs, warm beans, and a bright cooked tomato-serrano salsa.

Ingredients

- 4 ripe Roma tomatoes, quartered
- 1/2 white onion, divided
- 1 serrano chile, stemmed
- 1 garlic clove
- 1 tablespoon neutral oil, plus more for tortillas and eggs
- 1/2 teaspoon kosher salt, plus more to taste
- 1 1/2 cups warm refried pinto beans
- 8 corn tortillas
- 8 large eggs
- 1/3 cup crumbled queso fresco
- 1/4 cup cilantro leaves
- 1 lime, cut into wedges
Instructions
, half the onion, serrano, garlic, and salt to a coarse salsa. Heat 1 tablespoon oil in a skillet and simmer the salsa until red, cohesive, and no longer watery, 10 to 12 minutes.
Finely dice the remaining onion. Warm the beans with enough water to make them spoonable; keep covered.
Film a skillet with oil and fry tortillas one at a time until supple with crisp edges, about 20 seconds per side. Drain without stacking tightly.
Fry eggs to the preferred doneness, seasoning the whites. Spread beans beside or lightly over each pair of tortillas, then add eggs.
Spoon hot salsa over the whites while leaving yolks visible. Finish with diced onion, queso fresco, cilantro, and lime.
