Crispy chicken Caesar wraps with golden panko chicken, cold lightly dressed romaine, Parmesan, and anchovy-garlic dressing.

Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts, cut into four thin cutlets
  • 1 1/2 teaspoons kosher salt, divided
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon water
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup finely grated Parmesan, divided
  • 1 teaspoon garlic powder
  • 3/4 cup neutral oil
  • 1/3 cup mayonnaise
  • 3 oil-packed anchovy fillets, mashed
  • 1 small garlic clove, finely grated
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 6 cups chopped romaine hearts, washed, spun completely dry, and chilled
  • 4 large flour tortillas

Instructions

  1. Season chicken with 1 teaspoon salt and pepper. Set out flour, eggs beaten with water, and panko mixed with 1/4 cup Parmesan and garlic powder. Coat each cutlet in flour, egg, then crumbs, pressing only enough to adhere; rest on a rack 10 minutes.

  2. Heat neutral oil in a wide skillet to . Fry cutlets in batches until deeply golden and 165°F at the center, 3 to 4 minutes per side. Drain on a rack, rest 5 minutes, and cut into wide strips.

  3. Whisk mayonnaise, anchovies, garlic, lemon juice, Dijon, Worcestershire, remaining Parmesan, and remaining salt. Toss chilled dry romaine with just enough dressing to gloss it, reserving any excess.

  4. Warm tortillas until flexible. Add dressed romaine and sliced chicken in compact rows, fold in the sides, and roll tightly. Serve immediately, with any remaining dressing alongside, so chicken and lettuce stay crisp.
