  • 2 1/2 pounds firm tart-sweet apples
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons ground cinnamon, divided
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt, divided
  • 3/4 cup (90 grams) all-purpose flour
  • 3/4 cup (75 grams) old-fashioned rolled oats
  • 2/3 cup (133 grams) packed light brown sugar
  • 1/2 cup (113 grams) cold unsalted butter, cubed
  • Vanilla ice cream, optional for serving

Instructions

  1. Heat oven to 350°F and butter a . Peel, core, and slice apples 1/4 inch thick. Toss with granulated sugar, lemon juice, 1 teaspoon cinnamon, cornstarch, vanilla, and 1/8 teaspoon salt; spread evenly in the dish.

  2. Whisk flour, oats, brown sugar, remaining 1/2 teaspoon cinnamon, and remaining 1/8 teaspoon salt. Rub in cold butter with fingertips until no dry patches remain and the mixture forms both crumbs and hazelnut-size clusters.

  3. Scatter topping loosely and evenly over the apples without packing it down. Set the dish on a sheet pan to catch drips and bake 40 to 50 minutes until the topping is deep golden and thick apple juices bubble vigorously around several edges.

  4. If the topping browns before the fruit bubbles, cover loosely with foil and continue baking. Test an apple through the topping with a thin knife; it should meet little resistance without becoming applesauce.

  5. Rest 20 to 30 minutes so the juices thicken while the topping remains warm. Spoon into bowls and add vanilla ice cream if using. Refrigerate leftovers, then reheat uncovered at 350°F to restore the crisp topping.
