Argentine choripán with crisp grilled chorizo in crusty rolls and chunky parsley-garlic chimichurri.

Ingredients

  • 1 packed cup flat-leaf parsley leaves, finely chopped by hand
  • 4 garlic cloves, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon ají molido or red-pepper flakes
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/3 cup red-wine vinegar
  • 2 tablespoons warm water
  • 2/3 cup neutral oil
  • 6 fresh Argentine-style pork-and-beef chorizos
  • 6 small crusty French rolls

Instructions

  1. Mix parsley, garlic, oregano, ají molido, salt, pepper, vinegar, and warm water. Stir in oil and rest at room temperature for 2 hours so the dried seasonings hydrate; do not purée.

  2. Prepare a . Cook chorizos over medium indirect heat, turning often, until nearly cooked, 15 to 18 minutes.

  3. Move chorizos over direct heat and brown until the casings are crisp and the centers reach 160°F, 3 to 5 minutes. Rest 5 minutes; split lengthwise without cutting all the way through if desired.

  4. Split rolls, grill cut sides until crisp, and add one chorizo to each. Spoon on enough chimichurri to season without saturating the bread and serve immediately.
