Cheddar turkey cottage pie skillet brings together savory turkey, peas, carrots, creamy potatoes, and sharp cheddar in a colorful, weeknight-ready dinner.

Ingredients

- 1 1/4 pounds ground turkey
- 1 1/2 pounds Yukon Gold potatoes, peeled and cubed
- 2 cups frozen peas
- 3 carrots, diced
- 1 cup low-sodium chicken broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon fresh thyme leaves
- 1 cup shredded sharp cheddar
- 2 tablespoons olive oil, divided
- 1 teaspoon kosher salt, divided, plus black pepper
Instructions
Boil 1 1/2 pounds Yukon Gold potatoes, peeled and cubed in salted water until tender, 12 to 16 minutes. Drain, mash with 1/2 cup of the listed broth, and keep warm.
Break 1 1/4 pounds ground turkey into rough pieces and season with half of 1 teaspoon kosher salt and black pepper. Heat 1 tablespoon olive oil in an oven-safe skillet over medium-high. Cook the turkey, breaking it into crumbles, until it reaches 165°F.
Add the remaining oil, 2 cups frozen peas and 3 carrots, diced, and the remaining sauce ingredients. Simmer until the carrots are tender and the filling is saucy, 7 to 9 minutes; season with the remaining salt and pepper.
Spread the mashed potatoes over the filling, top with 1 cup shredded sharp cheddar, and broil until bubbling and spotted brown, 2 to 4 minutes. Rest 5 minutes before serving.
