Thinly sliced carne asada with deep grill char, a juicy center, warm corn tortillas, cilantro, and lime.

Ingredients

  • 2 pounds outside skirt steak, silver skin removed
  • 1/3 cup fresh orange juice
  • 3 tablespoons fresh lime juice
  • 3 tablespoons neutral oil, plus more for the grill
  • 4 garlic cloves, finely grated
  • 1 jalapeño, finely chopped
  • 1/2 cup chopped cilantro, divided
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon ground cumin
  • 1 teaspoon ancho chile powder
  • 1/2 teaspoon black pepper
  • 12 warm corn tortillas, for serving
  • 2 limes, cut into wedges

Instructions

  1. Cut skirt steak crosswise into grill-manageable sections. Combine orange juice, lime juice, oil, garlic, jalapeño, half the cilantro, salt, cumin, ancho, and pepper. Marinate steak 1 to 2 hours, turning once; do not exceed 4 hours.

  2. Prepare a for very high direct heat and oil the grate. Remove steak from marinade, discard marinade, and pat the surface dry so it chars rather than steams.

  3. Grill without moving until deeply browned, 2 to 4 minutes per side depending on thickness, to 130–135°F for medium-rare or the diner’s preferred safe doneness. Move pieces as each reaches temperature.

  4. Rest 8 minutes. Identify the long muscle fibers, cut each section into shorter lengths if needed, then slice very thinly perpendicular to the grain.

  5. Scatter with remaining cilantro and serve immediately with warm corn tortillas and lime wedges, letting the charred beef remain the centerpiece.
