Çılbır with chile butter

Turkish çılbır with two soft poached eggs on garlicky yogurt, streaked with red Aleppo-pepper butter and dill.

Equipment

  • Any lidded pot of at least two quarts works; a very large pot loses heat faster.

Ingredients

  • 2 cups full-fat Greek yogurt
  • 1 small garlic clove, finely grated
  • 1/2 teaspoon kosher salt, divided
  • 8 large eggs
  • 2 tablespoons distilled white vinegar
  • 4 tablespoons unsalted butter
  • 2 teaspoons Aleppo pepper or pul biber
  • 1 tablespoon chopped dill
  • Warm flatbread or toast, for serving

Instructions

  1. Stir yogurt, garlic, and half the salt until smooth. Let stand at room temperature 20 minutes so it will not chill the eggs.

  2. Bring a of water to a bare simmer and add vinegar. Crack each egg into a small cup.

  3. Slide eggs into the water in uncrowded batches and poach without a rolling boil until whites set around soft yolks, 3 to 4 minutes. Drain briefly on a clean towel and season.

  4. Meanwhile melt butter until foaming and just nutty. Remove from heat, stir in Aleppo pepper, and let it bloom without scorching.

  5. Spread yogurt on warm plates, add eggs, and spoon chile butter over them. Finish with dill and serve immediately with bread.
