Bean and egg baleadas
Soft chewy Honduran flour tortillas folded around creamy fried red beans, softly scrambled egg, salty white cheese, crema, and avocado.

Equipment
- Preheat a 9-inch metal cake pan; the crust will be lighter but still valid.
Ingredients

- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 1/2 teaspoons kosher salt, divided
- 1/3 cup lard or neutral oil for the dough
- 2 1/2 tablespoons neutral oil, divided
- 1 cup warm water, plus more as needed
- 2 cups cooked Central American small red beans
- 1/2 cup bean cooking liquid
- 1/2 small white onion, chopped
- 6 large eggs
- 2 tablespoons whole milk
- 1 cup crumbled queso duro, queso fresco, or cotija
- 3/4 cup Honduran crema or sour cream
- 1 ripe avocado, sliced
Instructions
Mix flour, baking powder, and 1 teaspoon salt. Rub in 1/3 cup lard, then add warm water until a soft slightly tacky dough forms. Knead until smooth, divide into six balls, coat with 1/2 tablespoon neutral oil, cover, and rest 40 minutes.
Cook onion in 1 tablespoon oil until golden. Blend beans with their measured liquid, add to the skillet, and fry while stirring until creamy, glossy, and spreadable, 7 to 9 minutes; season with 1/4 teaspoon salt.
Roll each dough ball into a thin 10-inch round. Cook on a until bubbles rise and brown freckles form, 45 to 60 seconds per side. Stack immediately under a towel so the tortillas stay flexible.
Whisk eggs, milk, and remaining 1/4 teaspoon salt. Heat remaining tablespoon oil over medium-low and scramble slowly, folding until softly set and still glossy.
Spread each warm tortilla with about 1/3 cup beans. Add one-sixth of the eggs, cheese, crema, and avocado across one half; fold over and serve immediately.
