Ingredients

  • 2 pounds center-cut cod fillets, cut into 6 portions
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons dry white wine
  • 1 tablespoon fresh lemon juice
  • 30 buttery round crackers, coarsely crushed
  • 5 tablespoons unsalted butter, melted and divided
  • 1/2 teaspoon garlic powder
  • 2 tablespoons chopped flat-leaf parsley
  • 1 lemon, cut into wedges

Instructions

  1. Heat oven to 425°F. Pat cod very dry, check for pin bones, and arrange in a parchment-lined . Season with salt and pepper and spoon wine and lemon juice around, not over, the fish.

  2. Mix cracker crumbs, 4 tablespoons melted butter, garlic powder, and half the parsley until evenly moistened but still coarse. Press a generous, loose layer over each fillet; drizzle with remaining butter.

  3. Bake until crumbs are golden and the thickest part of the cod reaches 145°F, 12 to 18 minutes depending on thickness. Broil for no more than 1 minute only if the fish is done before the crumbs brown.

  4. Rest 5 minutes, finish with remaining parsley, and serve with lemon wedges, spooning the small amount of pan juice around the fish so the top stays crisp.
